Soup is definitely one of my favorite dinners to make for the family. The soups that I make are easy and made all in one pot for easy cleanup. Most are well balanced and served with a fresh loaf of bread or salad and make the perfect, healthy meal for my family.
This chilly east coast weather is perfect for soup. Tortellini Soup is probably one of the easiest and most satisfying soups that I make. I received the recipe from my mother in-law when I was a newlywed about 20 years ago and I have been making it ever since.
3 cloves garlic
3 Tbs. butter
3 32 oz boxes of chicken broth(regular or low sodium)
2 bags frozen cheese tortellini
10 oz box frozen chopped spinach (thawed and water squeezed out)
16 oz can stewed chopped tomatoes (drained)
In large saucepan over med/low heat cook garlic in butter until light golden color
Add broth and tortellini
Bring to a boil
Add tomatoes and spinach
Simmer 5-10 minutes
Top with parmesan cheese
Serve with your favorite type of bread-Italian, French, Sourdough Italian(our fave) and Enjoy!!!!
